Leftover Turkey?

I got this recipe from a friend (who got it from a friend) and with a few small changes....it has become my new favorite soup!

Chili Soup

  • 6 cups of water seasoned with chicken bouillon or 6 cups of chicken stock
  • 2-3 cups of cooked/seasoned shredded chicken or LEFTOVER TURKEY!
  • 1 onion diced
  • 1 green pepper diced
  • 1tsp of garlic minced
  • 1tsp cumin
  • 1tsp chili powder     * i didn't have cumin so I used 2tsp of chili powder
  • salt and pepper to taste
  • 16 oz can of white beans * i used pinto or chili beans
  • 10 oz can of Rotel tomatoes or diced tomatoes
  • 8 oz pepper jack cheese shredded
  • 8 oz sour cream
  • 1/2 cup of chopped cilantro
  • 1 cup of of uncooked orzo * cook as directed on box
Saute the onion and pepper in a little olive oil until tender.  Add garlic and saute a minute more.  Add tomatoes, broth, chicken, beans and cooked orzo and bring to a simmer.  Add cheese, sour cream and cilantro just before serving! 

Chicken Wild Rice Casserole

  • 2 pkg. Uncle Ben's long grain and wild rice (cooks in 5 mins)
  • 4-6 chicken breasts, cooked and cubed or LEFTOVER TURKEY!
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 1-1/2 cups grated cheddar cheese
Cook rice as package directs.  Place rice in bottom of 10-inch baking dish.  Cover with cubed chicken.  Mix together soup, mayonnaise and cheese.  Spread over chicken and rice.  Bake at 350 for 30 minutes or until hot and bubbly.  Serve with a green vegetable or salad.

Thanksgiving!

This year we celebrated Thanksgiving at our house.

A few days ago...I was defrosting the turkey in the tub (that is the way my mom always did it)...and later I found Ian in the tub with the turkey!
 Ian - "Mommy this water is FREEZING!"
 
 Thanksgiving morning, we watched the Macy's Day parade..and then got the dinning room table ready for dinner!

 

Matt's parents joined us for lunch and then spent the remainder of the day with us.




We have so much to be thankful for!  I am so thankful for a loving and supportive husband and my two boys!  I am most thankful for my Savior Jesus Christ and that He came to this world to save me of my sins.  I am excited to be celebrating his birth next month!

Our first official Camping Trip!

 Thursday night, after Matt got off of work, we loaded up the boys and went camping at Table Rock.
Within minutes of finding our site #73...Matt had the tent up and a fire going!
then it was time for .....Smores and Pizza Mountain Pies! Yum!


Friday morning, after breakfast (pancakes and bacon) we hit the trails!

Matt had high hopes of making it all the way to the top of the Table Rock trail...

 and we were not going to let the scattered showers keep us from trying..

we didn't make it that far, but we were very impressed that Levi made it almost a whole mile 
before asking to get put in the backpack carrier...
Ian was happy to be out in front leading the way!

 We almost made it two miles, when we finally decided to stop to eat lunch and turn around.

 When we got back to our site, Matt started another fire

Before dinner, Matt walked around the camping loop while Ian rode his big wheel.







 The rain coats came in very handy on this camping trip.  By 8:30 Friday night, it started raining and got really cold. I ended up taking the boys into the tent to get out of the rain and keep warm.  At 9:45 the boys we still up singing songs, laughing and playing with their blue glow stick. We decided that since we were only going to stay until after breakfast in the morning, to just pack it up and go home.  We bundled up the boys and put them in their car seats while took the tent down and pour buckets of water over the fire.  By the time we pulled out onto the highway...it was POURING!
The next morning, Matt got up with the boys and let me sleep in.  I have to say...it was so nice waking up to a warm house!
